Haiphong’s specialty of cool red jellyfish salad
Every year, from lunar March, when the first sunlights signal an upcoming sweltering summer, it is also the beginning of a jellyfish season. The jellyfish must be red ones, usually ordered from Thuy Nguyen district of Hai Phong, which is well-prepared before making the salad. A good cook is the one who adds lemon and cumquat in bowl of water which the jellyfish is steeped in for better aroma and flavor. Signs that show the jellyfish is edible are when it turns mahogany red and the flesh is clear and soft. The taste of jellyfish is light and cool like pieces of seaweed jelly. The jellyfish is a very good food for health and to treat headache, dizziness, especially in the sunny days which are likely to cause fatigue.
